creme brulee “minis”


One of the most decadent desserts is also one of the easiest to prepare. The secret to this perfect dish as always is in using the freshest and best quality ingredients. We love to do these “minis” for dinner parties because you can prepare them days ahead and when it comes time to carmelize the top you can create a little theatre and conversation around the torching! They are a delicious finish to any dinner party and you only need a few spoonfuls to be really happy.

crème brulee “minis”

2 c heavy cream
4 large organic egg yolks
1 tbs vanilla extract
1/2 c organic sugar
pinch sea salt

Preheat  oven 325f
Bring  cream, ¼ c sugar and vanilla to boil stirring constantly then remove from heat. In a bowl mix egg yolks, ¼ c sugar and salt until blended then slowly (drip by drip at first) add cream mix to eggs while stirring… careful not to cook the yolks. Then pour into small ramekins (about 2 inches tall). Place ramekins in a baking pan and pour boiling water into bottom of pan for a water bath(to cover halfway up the dish). Cook for approximately 30 minutes or until they are firm and jiggly. Refrigerate at least 2 hours but best overnight. When ready to serve sprinkle a little organic sugar on top and carmelize with a culinary torch.
